This story starts in Venice, California during the 2020 Covid pandemic. While everyone was stuck at home, the mind of Chef Josiah Citrin never stopped working. With too much time on his hands, Chef Citrin kept cooking and cooking, playing with old recipes and making new ones. He decided that one night he wanted to make a roasted chicken for family dinner, but not just any roasted chicken. He grabbed all the herbs and miscellaneous items he could find in the pantry and started mixing together. He stuck it all in the oven. The family drooled and gobbled it up. Non stop talking about how delicious, tender, and crispy this chicken was. They conversed over what to call this new dish. When one person said “I don’t know it’s just a dirty chicken.” and then another responded “Who’s a dirty chicken.” They all giggled but it stuck.
Once the world began to go back outside and restaurants reopened, Chef Citrin knew that this dish was something special and should be showcased at one of his restaurants. The Dirty Chicken was put on the 1 Michelin Starred Citrin restaurant, where it’s fame rose. While Citrin is where this dish originates, as new ventures came Chef Josiah decided that the Dirty Chicken should have a place of its own. There was born Augie’s on Main the Home of the Dirty Chicken.
